First course:

Watermelon Wedge – Yellow Tomato, Parma Ham, Basil, Passion Fruit Essence

Cauliflower Hummus – Harissa Chickpeas, Socca Bread, Cucumber

Summer Corn Gazpacho – vanilla oil, avocado, corn crumbs, coriander

Second gear:

ARCTIC CHAR – Agrodolce sauce, Tuscan white beans and kale, pine nuts

BUTTER CHICKEN – turmeric rice, peanut chutney, naan

RADIATORE PASTA – Pulled Veal Osso Busso, Bearnaise butter, fresh herbs

Third course:

CLOUD FRESH CREAM – strawberry coulis

ICED DULCE DE LECHE – pineapple, graham cracker crumbs

TEXAS CHOCOLATE LEAF CAKE – Cocoa Pecan Frosting, Vanilla Fudge Sauce
